I made this for dinner last night, and it was delicious!  I served as the sauce for a spinach lasagna.

2 tbsp butter

2 cloves of garlic, diced fine or grated

2 tbsp flour

salt and pepper to taste

2 oz cream cheese

1/2 cup parmesan cheese

1/2 cup of red, orange, or yellow bell pepper, roughly chopped

olive oil

 

Toss the bell pepper in olive oil and spread on a baking sheet.  Broil until they become soft and start to caramelize.  Meanwhile, melt the butter and stir in the flour.  Keep stirring and let it cook for about 1 min before pouring in the milk.  Continue to cook the white sauce until it thickens, stirring often to keep it from being lumpy.  Add the cream cheese, parmesan, and S&P.  Once the peppers are done, toss the sauce and the peppers in a food processor and puree.  Use as you would any alfredo sauce.
