This is a recipe that my Granny clipped from the newspaper and sent to me.  She’s always looking out for good vegetarian recipes for me, and I love it!  This one has very little actual nutritional value, but don’t let that stop you!  Just serve some veggies on the side.  

Lazy Pierogi Casserole:

15 cooked lasagna noodles 

1st mix: 2 cups cottage cheese, 1 egg, and 1/4 cup onion salt

2nd Mix: 1 cup cheddar cheese, 2 cups mashed potatoes, salt and pepper

3rd Mix: 1 cup butter, 1 cup finely chopped onions

Layer noodles, 1st, 2nd, and 3rd mix in a 9×13 dish.  Bake for 30 minutes at 350.  Serve with Sour Cream.
