One of the best things about having a newborn (other than, you know, THE BABY…) is the fact that friends from church provide us with meals for the first two weeks.  It’s probably one of the reasons that we have a kid every 20 months.  That two week break from cooking is so worth it.  This recipe is  from a dish that our friends, Matt and Krista, brought us after the birth of Ezra.  It’s easy and comforting, and can be adapted using other veggies, cheeses, or protein sources.

Microwave Broccoli Quiche

2 cups fresh broccoli florets

1/2 cup chopped onion

4 eggs, beaten

1/2 cups milk

2 cups cooked rice

1 cup shredded motz cheese

1 cup shredded cheddar cheese

1/4 tsp seasoned salt

1/8 tsp cayenne pepper

Combine broccoli and onion in a greased microwave safe pie pan.  Cook, covered, for 5 min.  Blend eggs and milk, add rice, cheeses, salt and pepper.  Pour egg mixture over veggies and stir gently.  Cook on 50% power for 9-11 minutes until quiche is set.  Let stand 10 minutes.
