Matt and I love a creamy tomato soup, with a grilled cheese sandwich for dipping.  It’s the kind of thing that we will occasionally make for just us, now that we cook almost entirely citric acid free for the family.  This is a made-from-scratch recipe that is definitely worth spending the extra time, instead of opening a can.  

Homemade Tomato Soup:

4 cups diced tomato

1 onion, chopped

4 cloves of garlic, minced

1 cup of veg broth

1 tsp sea salt

1 Tbsp dried basil

dash of pepper

2-3 tsp natural sweetener (I use honey)

saute onion and garlic in oil until tender.  (I add the garlic for only the last few seconds, so it doesn’t burn.)  Add tomatoes and veggie broth and cook over medium heat for approximately 15 minutes.  Remove from heat and allow to cool slightly before blending until smooth.  Return to pot and add remaining ingredients.  Simmer until all the flavors have melded in to a delicious pot of grilled cheese dipping goodness.
